On Friday night, Bechstein drove the horses in two different formations. The first hitch was called a unicorn hitch, which featured two horses in the back and one leading the way in front.  The next hitch featured four horses, two of which had never performed before. “This was good practice for them,” said Bechstein. “To have people and noise and clapping, those are all distractions for them, so I’m very impressed with them.” Together, the couple owns 11 Clydesdale horses that they keep on their seven-and-a-half acre farm in Portage, Ohio.  “Taking care of them is a full-time job,” said Bechstein. “I tell people horses are great for kids, because they really teach them a lot. They teach them a lot of responsibility. But I always tell the kid to remember, even when it’s 20 degrees below zero, you still have to go out and feed that horse.” Bechstein said getting them ready for any performance takes at least three hours. They are first thoroughly cleaned, especially their signature white feathered feet. They then have their tale and mane braided and decorated with flashy accessories. The harness is then applied, which can take a significant amount of time because it is made up of numerous individual pieces. One pair of harnesses can cost up to $12,000.  A lot of work goes into training the horses as well. Bechstein starts with what she calls groundwork, which includes walking behind them to mimic driving and teaching them spoken commands. She then moves onto attaching them to a work sled to get them used to pulling, which she said can sometimes be challenging. “The thing about Clydesdales is they’re beautiful but they don’t like to work,” she said. “If they can get out of it, they will.” Although Bechstein has always raised horses, she didn’t start out with Clydesdales. She originally showed Appaloosa horses on the national level. She even was named the non-professional world champion in 1988, shortly before she started her career with Clydesdales. “From there I accomplished what I wanted to, so I ended up going to Iowa, bought two mares, brought them back and that was the start of it all,” said Bechstein. Her career driving horses happened by accident at a holiday parade one year.

What benefits do such standards have? What are the challenges and how can we overcome them? ISO method are crucial to guarantee food safety and quality; they are the basis for laboratory accreditation according ISO 17025. This accreditation demonstrates the laboratory’s competence to customers, companies and regulatory authorities in reducing duplications, minimising errors, and speeding up the time to market. ISO methods facilitate the use of non‑proprietary technologies and supplies, paving the way for results that are reproducible between laboratories and accepted around the world. However, classical, culture-based methods take long to yield results, which is a critical issue for foods because it increases their costs and storage times. To overcome these limitations, regulations allow using alternative rapid methods for food businesses if they can provide validation data showing equivalent results. Using the latest published versions available through ISO or the websites of the responsible national committees, which are usually published in the local language, is important to guarantee compliance. New reviewed methods include the changes from previous versions and the impact of these changes in their introduction. Changes considered as major may impact method performance and results and, therefore, laboratories should perform additional verifications to demonstrate that they can make the method work. Alternative rapid methods should also be revalidated against the current versions when there are major changes. To be compliant, it is crucial to correctly implement the latest version of reference or the alternative rapid method validated against the reference method. The ISO website, www.iso.org, or the websites of the national standardisation bodies give access to the latest versions of the methods and the standards under development. Experts willing to be involved are encouraged to participate or collaborate with the local standardisation committees and contribute towards the revision and publication of new standards. For alternative rapid methods, dedicated independent validation organisations like MICROVAL (www.microval.org), AFNOR Validation (www.nf-validation.afnor.org), or AOAC (www.aoac.org) provide information about the validation reports, status and certificates. How do these changes affect your business and personal role? As an application specialist working on regulatory affairs, I need to provide support to the customers to guarantee that standard and rapid alternative methods are correctly implemented and performed.
